Happy March everyone! Help us welcome Spring with these tasty and refreshing chocolate covered strawberries, with a recipe courtesy of Peace Pies!
1 cups cacao powder
1/2 teaspoon pink salt
1 teaspoon maca
Pulse above ingredients in a processor for about 10 seconds.
3/4 cup agave
1 cup of coconut oil, melted
Pulse again for an additional 30 seconds. Do not process too long or oils will separate.
Dip strawberries in chocolate sauce and place on a baking sheet lined with parchment paper. Refrigerate and enjoy!

Just in time for Super Bowl Sunday, this month we get a delicious bite of the cookie dough bites, and a look into the work put on by Trilogy Sanctuary!
2/3 c raw cashews
1/3 c oats
2 Tbsp Agave
1 Tbsp Maple Syrup (Omit and use Agave to preserve true Raw Status if you care)
1 Tsp Vanilla Extract
1/4 c Vegan Chocolate Chips ( we recommend the brand Enjoy Life )
1/2 c unsweetened coconut flakes ( For rolling )
Blend the cashews and oats in a Vita-Mix, food processor, or high speed blender until they're a fine powder. Don't overblend or it will turn into cashew butter very quickly!
Add the agave, maple, vanilla and blend until it is all mixed. Be careful to just blend in short bursts and only until combined; don't over-process.
Stir in the chocolate chips by hand.
Form into balls and then roll in the coconut flakes. The flakes will stick to the balls. Alternative options - You can dust with cacao powder !
If dough is sticky, chilling it in the refrigerator or flash-chilling it in the freezer helps make it easier to work with.

There is no better way to give a warm welcome to December than with a warm cup of El Abuelito, created by the brilliant minds over at Alchemy & Craft!
This Hot Chocolate “El Abuelito” is inspired by a late evening craving with my partner, who is Colombian. He grew up with a large family who would get together every Sunday brunch with a huge homemade meal and the most important piece: Chocolate y Queso.
His grandmother would faithfully make their family Hot Chocolate from Abuelita ‘tablets’ and then put in Muenster Cheese near the end, so there was gooey, yummy cheese in your Hot Chocolate as you were enjoying it. Can you imagine as a child?! Back to the present: We decided, one late evening, to recreate this memory of his with a healthier chocolate. Enter almond milk & one “Alchemy & Craft” bar (and Organic Muenster cheese).
1 “Alchemy & Craft” Bar (any flavor)
1 cup milk of choice (we used almond)
2 slices Organic Muenster Cheese
Heat milk over low heat until steam is rising from it. Add Alchemy & Craft bar and allow to melt slowly. Stir gently. Do not boil. When completely melted, transfer to mug and add Muenster Cheese. Allow to sit for about 2 minutes to let cheese melt. ENJOY!

This month's cacao recipe was taken from the newly released book "Superfoods for Life: Cacao" written by Matt Ruscigno with 75 amazingly creative sweet and savory cacao recipes by Joshua Ploeg. The book is so rich in nutritional information about how to enjoy cacao and reap its superfood powers! It will undoubtably answer many of your ¡ca-questions!
We chose this recipe because it seemed like the perfect way to cool down during this hot San Diego September!

Who doesn't love a lassi? Its a refreshing and nutritious yogurt drink, and chocolate is an obvious match. Mango adds vitamin C and beta-carotene, the precursor of vitamin A. How about strawberries, honeydew melon, or peach? The sky (or your imagination) is the limit! If coconut is not your milk of choice, others will work here as well.
It is safe to say that we are all familiar with chocolate. Most of us are probably even familiar with the cacao bean it is made from. But how many of use know about the tree? What about the fruit and flowers it bears? and how does it get to our kitchen pantries? We decided to take a closer look and dissect how the chocolate we crave is brought from the jungle into our homes.
What is Cacao?
To understand where cacao, or Theobroma Cacao, comes from, we first must start at the tree. The cacao tree can be found in over 50 tropical countries, everywhere from the jungles of Meso-America to Indonesia, Africa, and throughout South America. From the trunk and branches of the tree, beautiful flowers grow all year round. About 1% of these flowers will mature to produce the cacao fruit, which grows into a football shaped pod. It can take up to 6 months for the pods to ripen on the tree before they are ready to be harvested. The cacao beans found inside these pods are the magic ingredient that creates the chocolate products we all know and love.
A Palate and Mind Expanding Experience
So many people love, crave, and experience chocolate in their own unique ways.
You may be familiar with artisan chocolate and wine festivals or even chocolate festivals in the cacao- growing areas of the world that celebrate the crop of that area. CacaoFest, however, is very unique in its intention, ethic, and scale. With the highly anticipated festival debuting in May, we take a look at where CacaoFest all started.
CacaoFest is a one day journey through the cacao jungles Meso-America, Indonesia, Africa, and South America. It is an opportunity to please all of the senses as we dive into the alluring flavors, music, art, history, and ritual tradition of the people around the world that cultivate cacao.
